Get ready for the outdoor cooking season with this special hands on workshop and demonstration from live-fire specialist Head Chef Matthew Briddon. This workshop will take place on the restaurant terrace of Iford Manor Kitchen.
Not only do we cook on our wood and charcoal fired Bertha every day here in our kitchen at Iford, but Matthew was one of the chefs who first brought Meatopia to the UK and has done live cooking there many times.
This workshop promises to provide you with all the hints and tips you need for an excellent live-fire season creating delicious food, whether on a BBQ, Big Green Egg, Bertha or other live-fire.
At Iford we also make our own sausages and Matthew, both our butcher and Master Charcutier, will teach you his craft so you will enjoy a hands-on workshop that will leave you with all the know how and practice at sausage making.
You will learn:
- good working practices to ensure the safe and hygenic preparation of sausages;
- which ingredients to use to create your sausages
- how to mix, make and season your mince;
- stuffing, tying and drying of your sausages
- making of some condiments to accompany your sausage
- prep, build and light a fire: all you need to know about different types of woods and fuels;
- perfect sausage cooking (and tasting!)
The day includes refreshments, a delicious lunch in Iford Manor Kitchen’s restaurant and all materials and ingredients required for the course.
